Hot Cross Buns - 8,900 Online Searches

Ingredients:

  • All-Purpose Flour (6-7 cups)

  • Active Dry Yeast (½ ounce)

  • Warm Whole Milk (2 cups and 4-6 tsp for icing)

  • Large Eggs (2)

  • Large Egg Yolk (1)

  • Water (2 tbsp)

  • Confectioner’s Sugar (1-½ cup)

  • Raisins (½ cup)

  • Currants (dried, ½ cup)

  • Butter (⅓ cup, salted or unsalted)

  • Salt (1-½ tsp)

  • Sugar (¼ cup)

  • Cinnamon (1 tsp)

  • Allspice (ground, ¼ tsp)

Instructions:

Dissolve the yeast in warm milk in a bowl and set it aside. Get a large mixing bowl and combine your 2 large eggs, sugar, butter, cinnamon, allspice, and salt with 3 cups of All-Purpose Flour. Beat these ingredients at medium speed until the dough [what?]. Once the mixture is smooth, mix your raisins, currants and the rest of the flour until the dough turns soft.

Add some flour to a cooking board or other flat surface and knead the dough for about 8 minutes or until it is smooth and elastic. Place the dough in a bowl coated with oil. Stir to ensure that the oil completely covers the dough. Let it sit in a warm place for 1-2 hours. The dough should rise and roughly double in size during this time.

On a floured surface, punch the dough down and divide it into 20 equal pieces. Place a towel over them and let them sit for 30-45 minutes. They will rise again during this time.

Meanwhile, preheat your oven to 375 degrees Fahrenheit. Get a small bowl and whisk the egg yolk and water together. Now cut the tops of each bun off and brush the mixture before placing the buns on a baking tray and sticking them in the oven for about 20 minutes (give or take, depending upon your oven).

To make your icing, get a small bowl and mix the confectioner’s sugar with milk, adding the milk a little bit at a time until you reach your desired consistency. Get a piping bag and apply the icing in a cross along the top of each bun. If you don’t have a piping bag, you can take a ziplock bag and cut a small hole in one of the corners.

Croque Madame - 8,300 Online Searches

Ingredients:

  • Gruyere Cheese (grated, 12 ounces)

  • Butter (¾ cup)

  • Milk or Non-Dairy Milk (1 cup)

  • Eggs (4)

  • Ham (3-4 pounds)

  • Sourdough bread (8 slices)

  • Bay Leaves (1 leaf)

  • Flour (2 tbsp)

  • Parmesan Cheese (p)

  • Salt (grated, ¼ cup)

Instructions:

Set your oven to bake and preheat it to 350 degrees Fahrenheit. While the oven preheats, take a large skillet and put it on a burner at medium heat. Add 1 ounce of butter to the skillet. When the butter is melted, add the flour and whisk for about 3 minutes. Now whisk in your milk, salt, pepper and nutmeg. Whisk until the mixture is thick, which should take about 10 minutes. Now remove the bay leaf and add the P\parmesan cheese. Once the parmesan is fully mixed, put the mixture in a heat-resistant bowl to cool down. This will be the sauce for the sandwich.

While the mixture cools down, place your slices of bread on the pan with a little bit of butter. Flip each side so that they both get brown. Add 3-4 slices of ham to each piece of bread. Next, add half of your Gruyere cheese to the bowl with your mixture and stir until thoroughly mixed.

Pour the mixture on the ham and top with bread. Cook the other side of the sandwich for about 3-5 minutes and add the rest of the butter, sauce and Gruyere cheese to the top of the sandwiches. Place the sandwiches in a baking tray and stick in the oven for 10-18 minutes or until golden brown.
Cook your 4 eggs in the skillet. Once the sandwiches are ready, take them out of the oven and top with an egg each and your preferred seasoning.

Quiche Lorraine - 8,190 Online Searches

Ingredients:

  • Pie dough, or frozen pie crust (enough for one pie)

  • Bacon (½ pound)

  • Milk or Non-Dairy Milk (1 cup)

  • Heavy Cream (½ cup)

  • Eggs (3)

  • Salt (½ tsp)

  • Pepper (ground, ½ tsp)

  • Nutmeg (ground, ⅛ tsp)

  • Cheese (grated, 1 cup)

  • Chives (chopped, 1 tbsp)

Instructions:

Preheat your oven to 350 degrees Fahrenheit. Place your dough in the pie pan you will use to make your Quiche. Freeze your dough for about 30 minutes before you start cooking. Line the pie pan with aluminium foil or parchment, add pie weights to the inside to prevent puffing during the blind baking. Now you can stick it in your oven. Let it bake for about 40 minutes.
While your crust is baking, get a pan or skillet and put it over a stove burner at medium heat. Add the bacon. When the bacon is fully cooked, remove it from the pan and add it to a bowl. Now add your onions to the skillet until they are thoroughly cooked. Remove the onions and add them to the same bowl as the bacon.

Get a large mixing bowl and whisk the eggs before adding the nutmeg, chives, and pepper. Once these ingredients are mixed well, add the heavy cream. Put lots of force into whisking the heavy cream to give your quiche a light and fluffy texture after baking.

Add the bacon, onions and cheese to the pie crust before pouring the eggy mixture into the pie pan. Gently stir the ingredients with a small spoon so the bacon, cheese and onions do not remain at the bottom of the pie pan.  Now you can stick the quiche in the oven and let it bake for 30-40 minutes. Let it sit for 5-10 minutes after taking it out of the oven.
