Roasted garlic mashed potatoes recipe

Whether they're served with roasted chicken, pork tenderloin, or steak, roasted garlic mashed potatoes are a delicious and creamy side dish to accompany your dinner. If you enjoy your mashed potatoes with the skin on like I do, so make sure to scrub your potatoes well before chopping and boiling.

INGREDIENTS

ROASTED GARLIC
1 head of garlic
1 tablespoon olive oil
salt & pepper

GARLIC MASHED POTATOES
1 head of roasted garlic
6-8 peeled large Yukon gold potatoes, scrubbed well
4 tablespoons unsalted butter
½ cup milk, warmed in microwave
3 tablespoons chopped flat leaf parsley
Salt & pepper to taste

DIRECTIONS

ROASTED GARLIC

  1. Cut the top off of the head of garlic. Place into a square of aluminum foil. Drizzle head of garlic with olive oil and sprinkle with salt and pepper.
  2. Wrap garlic head in aluminum foil and roast in oven for 30-40 minutes.
  3. To remove roasted cloves from garlic head, allow to cool slightly then squeeze out.
  4. Roasted garlic can be stored in an airtight container in the fridge for 4-6 days.

GARLIC MASHED POTATOES

  1. Add roughly chopped potatoes to a large pot of water and bring to a boil.
  2. Cook potatoes until fork tender, approximately 20 minutes, the drain in a colander.
  3. Return potatoes to pot, add butter, milk, chopped parsley, roasted garlic, salt and pepper.
  4. Using a potato masher, mash all ingredients together until desired consistency is reached.
  5. Transfer to serving dish and enjoy immediately!
