A healthy apple and broccoli salad (and homemade creamy dressing) recipe

Apple, broccoli, carrot and sunflower seeds come together to put a little spin on an old favourite. This salad guarantees delicious flavours and textures. The simple yet scrumptious dressing makes this salad absolutely incredible and will satisfy everyone's taste buds.

Ingredients

3 cups fresh broccoli florets (about 3 small heads), cut up in small bite-sized pieces
1/2 cup carrots, shredded
1/4 cup red onion, diced
2 green onions, thinly sliced
1 large Granny Smith apple, finely chopped
1/3 cup raw sunflower seeds

Creamy dressing ingredients
1/4 cup mayonnaise
1/3 cup plain greek yogurt
2 tbsp lemon juice
1 tbsp sugar
Fresh ground sea salt and black pepper to taste (I used about 1/2 tsp of each)

Directions

  1. In a large bowl, combine broccoli, carrots, red and green onion, apple, and sunflower seeds.
     
  2. In a small bowl or glass measuring cup, whisk together mayonnaise, Greek yogurt, lemon juice, sugar, salt and pepper.
     
  3. Add the dressing to the salad and toss to coat. Chill until ready to serve.
